Picking projects
You should pick one project to observe, and you should observe that project for one entire sprint.
You should also get a variety of observations in meetings from different projects, because every project carries out its work differently. No two projects are the same, as it should be with Agile teams!
Knowing which projects are live
Tech Fleet doesn't offer a streamlined way to see all of the amazing projects in Tech Fleet. The Tech Fleet Guilds are working on a project dashboard showing this in easy ways though!

You can see all project meetings in the Tech Fleet Web Calendar.
You can see all active project deliverables in the Tech Fleet Notion Space.
You can see project team chats in Tech Fleet Discord once you have the Observers role.
